Healthy Eating


As a mother I know it is easy to grab something that is QUICK and EASY which is not always healthy; but it can be! For example: I made this salad for lunch and it was ready in less than 5 minutes.  
For this salad you will need:

Pecans
Dried mango
Mixed greens
Red pepper
Granny smith apple
Lemon poppy seed dressing
Note* Use approximately a handful of each

I accompanied this salad with fresh baked 12 grain bread and water with lemon. For a extra protein, add grilled chicken, boiled eggs or tofu. Eating healthy can be quick and easy so plan to have healthy ingredients in your fridge so they are on hand and easily accessible. Enjoy! :)
